Duck with Vanilla

Ingredients for 4 servings
- 1 Duck
- 2 Bourbon Vanilla beans
- 3 nice tomatoes
- 1 large onion
- 1 carrot
- 1 level tbsp. flour
- 1 rounded tsp. sugar
- 1 bouquet garni
- Salt and pepper
- A little oil
  1. Cut up the duck and brown it in very little oil in a heavy sauté pan. When nicely colored, remove most of the fat and add the diced carrot and thinly sliced onion to the pan. Cook slowly until the onion is soft.
  2. Add the diced tomato, split vanilla beans and flour. Stir well with a wooden spoon to prevent lumps and cook for a few moments.
  3. Add enough water to come to the top of the duck; add the bouquet garni, salt and pepper. Simmer for 20-30 minutes over low heat. Correct the seasoning.
