Eggplant Caviar

- 1 clove of garlic
- 200 g (3/4 cup) olive oil
- Salt and pepper
- Juice of 1 lemon
Method
  1. Grill the whole eggplants over high heat in a non-stick pan until the skin blackens; peel;
  2. purée the eggplant with the garlic; 
  3. slowly whisk in the olive oil (as if making mayonnaise);
  4. season to taste and blend in the juice of 1 lemon.
