Eggs in Ramekins, Portuguese-Style

Chef's Note
This is a traditional Portuguese dessert, served in ramekins or small dishes. It can be unmolded before serving but the technique requires more precision when cooking the sugar.

- 250 g (9 oz.) fine sugar + more for the ramekins
- 10 Egg yolks
- Butter
- Grated zest of 1 orange
Method
  1. Make the syrup: in a saucepan, combine the sugar with a few drops of water until dissolved; cook until syrupy;
  2. remove the pan from the heat and add 1 tbsp. cold water to stop the cooking;
  3. butter the ramekins; coat them with a little sugar;
  4. pour the lightly beaten egg yolks into the ramekins; pour the warm syrup over top; stir lightly; sprinkle with orange zest;
  5. steam for 35 minutes.
