Empress Rice Pudding - Riz à l'impératrice Recipe
Ingredients
- 100 g (3 1/2 oz.) diced candied fruit
- 50 g (2 oz.) short-grain rice
- 250 g (1 cup) milk
- 125 g (1/2 cup) crème anglaise (custard)
- 125 g (1/2 cup) cream, whipped
- 150 g (1/2 cup + 2 Tbsp.) organic crème fraîche
Method
- Heat the milk and rice and cook over low heat.
- Whip the cream to soft peaks.
- When the rice is cooked and warm, fold in the crème anglaise, candied fruit, whipped cream and crème fraîche.
- Refrigerate.
