Ingredients
- 100 g (3 1/2 oz.) diced candied fruit
- 50 g (2 oz.) short-grain rice
- 250 g (1 cup) milk
- 125 g (1/2 cup) crème anglaise (custard)
- 125 g (1/2 cup) cream, whipped
- 150 g (1/2 cup + 2 Tbsp.) organic crème fraîche
Method
  1. Heat the milk and rice and cook over low heat.
  2. Whip the cream to soft peaks.
  3. When the rice is cooked and warm, fold in the crème anglaise, candied fruit, whipped cream and crème fraîche.
  4. Refrigerate.
