Endives, Ternat-Style

For 4 servings

- 1 kg (2 1/4 lb.) Belgian Endives, thinly sliced
- 100 g (3 1/2 oz.) bacon, cut into small strips
- 750 g (1 lb. 10 oz.) potatoes
- 6 shallots, finely chopped
- 50 g (3 tbsp.) +1 tbsp. butter
- Salt, pepper, nutmeg
  1. Melt the butter in a skillet; add the bacon bits and fry; 
  2. add the shallots and sweat for a few minutes; add the endives;
  3. peel and slice the potatoes; cover the endives; 
  4. add a knob of butter; add 500 ml (2 cups) water; season with salt, pepper and nutmeg; 
  5. cook, covered, for 30 minutes.
