Fettucine with Porcini Mushrooms Recipe

Ingredients
Ingredients for 4-6 servings
- 500 g (18 oz.) fresh fettuccine
- 20 g (2/3 oz.) dried porcini or other Mushrooms
- 650 ml (1 1/2 cups) tomato coulis
- 125 ml (1/2 cup) cream
- 60 ml (1/4 cup) extra virgin olive oil
- 4 basil leaves
- 2 cloves of garlic, chopped
- Sea salt to taste

Method
- Soak the dried mushrooms in 500 ml boiling water for 10 minutes; rinse and drain;
- sauté the garlic in the olive oil; add the tomato coulis and simmer over low heat for 10 minutes;
- meanwhile, cook the pasta in boiling salted water;
- add the mushrooms, basil and cream to the sauce and continue cooking for 5 minutes; season with salt;
- drain the pasta; place in a serving platter or in bowls; pour the sauce over top and serve immediately.
