Pasta Shells with Fresh Tomato

Ingredients for 4 servings
- 200 g (7 oz.) Tomatoes, peeled, seeded and diced
- 340-400 g (12-14 oz.) shells or other Pasta
- 4 cloves of garlic, minced
- 1 tbsp. basil
- 125 ml (1/2 cup) olive oil
- Salt and pepper
  1. heat the oil in a skillet over medium heat;
  2. add all the ingredients except the pasta;
  3. heat and pour immediately over cooked drained pasta. Serve hot.

Sardinian variation

In Sardinia, spicy sausage meat is cooked in olive oil with garlic and added to the mixture (step 2). Finish with a grating of Pecorino cheese.
