Fish and Coconut Milk Papillotes

For 4 servings

- 4 portions of fresh cod fillet
- 4 small zucchini
- 3 leeks
- 200 ml (3/4 cup) coconut milk
- 2 tsp. curry powder
  1. Preheat the oven to 180°C / 350°F.
  2. Thinly slice the zucchini and leeks.
  3. Blanch the vegetables in boiling water for 2 minutes.
  4. Place a layer of vegetables on 4 pieces of parchment paper or aluminum foil, drizzle with coconut milk and sprinkle with curry powder.
  5. Season with salt and pepper and place a portion of fish on top.
  6. Seal the packets and cook in the oven for 10 minutes. Serve hot.
