Flashy'n Vitamin (beet, yogurt and chevre sandwiches) Recipe

Ingredients
For 12 mini stacked sandwiches
- 4 mini baguettes or toasted baguette slices
- 120 g (4 oz.) cooked organic or regular beets
- 60 g (2 oz.) plain Greek-style yogurt
- 4 Granny Smith apples, diced
- 180 g (6 oz.) goat cheese, in a log
- herbes de Provence
- olive oil
- balsamic vinegar
- salt and pepper
Method
- Cut the ends off the mini baguettes and slice into rounds.
- Generously spread two rounds with the beets that have been crushed and mixed with the yogurt.
- Add thin slices of chevre (15 g/ 1/2 oz.), then top with diced apple that has been marinated in olive oil, balsamic vinegar, herbes de Provence, salt and pepper.
- Assemble the sandwiches by stacking the two garnished slices and topping them with a third slice; fasten the stack in place with a pick.
