Fried Calamari, Andalusian-Style Recipe

Chef's Note
It's best to buy small calamari, which are tenderer. If the calamari are more than average size, they should be first cooked in boiling water and then chopped. To fry them, use a fritter batter (beaten egg and flour thinned with water.)
Ingredients
- 500 g (18 oz.) small Squids
- Lemon juice
- 1 clove of garlic
- Salt and pepper
- Oil
- farine
- Beaten egg
- Salt and pepper
Method
- Wash the squid in plenty of water; remove the entrails, hard parts and ink;
- cut into rings; marinate in a little lemon juice, oil, garlic, salt and pepper for 30 minutes;
- dry with a clean towel just before frying;
- dip the calamari in flour, then beaten egg; dip again in flour;
- fry in hot oil until golden. Serve while still very hot.
