Ingredients
For 6 servings
Filling
- 8 portions of fromage frais (200 g) or other fresh cheese
- 2 eggs
- 70 g (5 tbsp.) light cream
- 1 vanilla bean, split and seeds scraped out
- 60 g (1/4 cup) powdered sugar
Shortbread crust
- 18 sablé biscuits (shortbread)
- 20 g (4 tsp.) softened butter
Method
Crust
- Crush the shortbread cookies and combine them with the soft butter.
- Line the bottom of a small cake pan with parchment paper, then press in the crust.
Cheesecake
- Combine the fromage frais with the eggs, cream, vanilla seeds and sugar. Pour the filling over the crust.
- Bake at 150° C (300° F) for 45 minutes.
- Let cool completely before unmolding.
