For 6 servings

- 8 portions of fromage frais (200 g) or other fresh cheese
- 2 eggs
- 70 g (5 tbsp.) light cream
- 1 vanilla bean, split and seeds scraped out
- 60 g (1/4 cup) powdered sugar

Shortbread crust
- 18 sablé biscuits (shortbread)
- 20 g (4 tsp.) softened butter


  1. Crush the shortbread cookies and combine them with the soft butter.
  2. Line the bottom of a small cake pan with parchment paper, then press in the crust.


  1. Combine the fromage frais with the eggs, cream, vanilla seeds and sugar. Pour the filling over the crust.
  2. Bake at 150° C (300° F) for 45 minutes.
  3. Let cool completely before unmolding.
