Served well-chilled, this fruit salad provides a real boost on a hot summer day. Its refreshing quality will easily make you forget about traditional richer desserts. Take advantage of fruits that are in season, choosing them very carefully so that they’re perfectly ripe in order to capture their best texture and natural sweetness. A treat!
You can serve the fruit cut into thin slices, arranged attractively on each plate, or in cubes. I prefer the latter version because it provides a more homogenous mouth-feel.
Ingredients
For 4 servings
Fruit salad
- 2 white peaches
- 2 green apples
- 2 kiwis
- 2 apricots
- 1 banana
- a few cherries
- 1 pear
- a few fresh peppermint leaves
Coulis
- 200 g (7 oz.) berries (raspberries, strawberries and blueberries)
- 2 tablespoons sugar (optional)
Decoration
- a few fresh peppermint leaves
Method
- Peel all the fruits and cut them into slices or cubes; add the chopped mint and combine well.
- Coulis: Purée the berries in a blender; the sugar is optional – it depends on the ripeness of the berries and their natural sugar content.
Presentation
- Place the salad onto plates with a drizzle of coulis.
- Add a few small mint leaves for decoration… and flavor!
