- 1 tbsp. vinegar
- Salt and pepper
- Black olives
- Green peppers
Method
- Cook the washed eggplants in a medium oven for about 1 hour or until tender. Let the skin blacken - this will give a smoky taste to the finished salad.
- Peel the eggplants while they are hot; cut into small pieces and add the chopped onion, garlic, tomato, olive oil, vinegar, salt and pepper.
- Arrange on a plate; garnish with olives and green pepper rings.
- Serve with grilled or roast meat, or fried or grilled fish.
