Greek Eggplant Salad - Melitzanosalata

- Onions
- Garlic
- Tomatoes
- Olive oil
- 1 tbsp. vinegar
- Salt and pepper
- Black olives
- Green peppers
  1. Cook the washed eggplants in a medium oven for about 1 hour or until tender. Let the skin blacken - this will give a smoky taste to the finished salad.
  2. Peel the eggplants while they are hot; cut into small pieces and add the chopped onion, garlic, tomato, olive oil, vinegar, salt and pepper.
  3. Arrange on a plate; garnish with olives and green pepper rings.
  4. Serve with grilled or roast meat, or fried or grilled fish.
