Fava - Split Pea Purée

For 6-8 servings

- 500 g (18 oz.) split peas
- 1 onion, cut in wedges + 1 onion, minced
- 125 ml (1/2 cup) olive oil
- salt and pepper
- juice of 1 lemon
  1. Wash the split peas; place in a pot, cover with water and bring to a boil.
  2. Add the onion wedges, a pinch of salt and 65 ml (1/4 cup) olive oil; reduce the heat and simmer for about 1 hour until the peas break down and form a thick purée.
  3. Remove from the heat; put through a food mill or use a blender.
  4. Correct the seasoning with salt; add the lemon juice, minced onion and remaining olive oil. Serve with country bread.
