- 1.2 kg (2 lb. 10 oz.) green Puy Green lentilss
- 240 g (8 oz.) smoked Bacon bits (lardons)
- 240 g (8 oz.) cured raw Ham or Country Ham, diced
- 100 g (3 1/2 oz.) chopped onion
- 100 ml (6 tbsp.) balsamic vinegar
- Salt and pepper
Method
- Place the lentils in cold water; bring to a boil with the salt, thyme and bay leaf and cook for 20 minutes.
- Chop the onions finely.
- Make the vinaigrette by combining the vinegar, salt and pepper.
- Combine the cooled lentils with the vinaigrette; add the onions, the diced raw ham and cooked smoked bacon bits.
- Place in a bowl, garnish with chervil.
