Green Lentil Salad with Bacon and Auvergne Ham Recipe

Chef's Note
- 1.2 kg (2 lb. 10 oz.) green Puy Green lentilss
- 240 g (8 oz.) smoked Bacon bits (lardons)
- 240 g (8 oz.) cured raw Ham or Country Ham, diced
- 100 g (3 1/2 oz.) chopped onion
- 100 ml (6 tbsp.) balsamic vinegar
- Salt and pepper
  1. Place the lentils in cold water; bring to a boil with the salt, thyme and bay leaf and cook for 20 minutes.
  2. Chop the onions finely.
  3. Make the vinaigrette by combining the vinegar, salt and pepper.
  4. Combine the cooled lentils with the vinaigrette; add the onions, the diced raw ham and cooked smoked bacon bits.
  5. Place in a bowl, garnish with chervil.
