Green Tomato Ketchup Recipe

- 3 kg (6 1/2 lb.) green Tomatoes
- 5 onions
- 125 ml (1/2 cup) coarse salt or sea salt
- 500 ml (2 cups) white wine vinegar
- 500 ml (2 cups) sugar
- 1 tsp. mustard seed
- 1 tsp. celery seed
- 2 tsp. turmeric
- 1 tsp. black pepper
- 1 tsp. ground ginger
Method
- Wash and slice the tomatoes; slice the onions; sprinkle with coarse salt; let rest 1 hour; rinse in cold water; drain;
- place all the ingredients into a pot; bring to a boil and simmer until thickened;
- pour while still hot into sterilized jars.
