Grilled Langoustines with Grapefruit Zest Recipe

Ingredients
Ingredients for 4 servings
- 20-24 large Langoustine, scampi or Dublin Bay Prawns
- 1 large Grapefruit
- 100 g (6 tbsp.) butter
- 50 g (2 oz.) grated coconut
- Mesclun (assorted salad greens)
- Salt and pepper
- 2 drops of pure vanilla extract
- Oil
Method
- halve the grapefruit; remove the flesh from half and chop it finely (remove the skin); grate about 1 tsp. zest;
- cream the butter with the vanilla; add the grapefruit flesh, zest and coconut;
- make a fairly deep lengthwise cut in the langoustines; fill with the butter mixture; broil for 4-5 minutes;
- meanwhile, line plates with lettuce leaves; season with salt and pepper and drizzle with a little oil and grapefruit juice (from the remaining grapefruit half);
- remove the langoustines from the oven; place on the lettuce and serve immediately.
