Chef's Note
Authentic pizza, large, very thin and homemade, is an exquisite dish. A marvel of skill and simplicity, real pizza is very different from the kind found in many restaurants.
Ingredients
For 8 servings (2 pizzas)
- 1 kg (2 1/4 lb.) flour
- 40 g (1 1/2 oz.) yeast
- 500 ml (2 cups) warm water
- 100 ml (6 tbsp.) olive oil
- 10 g (2 tsp.) sugar
- 30 g (2 tbsp.) salt
Method
- In a bowl, dissolve the yeast in the warm water.
- On a work surface, form the flour into a well; add the salt, sugar, oil and water and yeast mixture into the centre; gradually blend in enough flour to form a smooth dough.
- Knead the dough until firm and elastic; form into a ball and cover with a damp cloth; let rise for two hours in a warm draft-free place; the dough is ready when it comes away easily from the bowl and does not stick to your fingers.
- Once the dough has doubled in volume, press it into a pizza pan or baking sheet.
- Top the pizza as desired, add a sprinkling of olive oil and let rest 5 minutes.
- Bake at 200 °C / 400 °F for 20 minutes; serve hot.
