Hot-Cold Apples and Blueberries with Maple

Chef's Note

An original recipe from Jacques Robert of the Tournant de la Rivière in Quebec

  1. Cook the apples in a little butter and maple syrup. Transfer to a heat-proof plate.
  2. Add the blueberries and grate some maple sugar over top.
  3. Pour on some 35% cream mixed with an egg yolk and a little Calvados. 
  4. Place under the broiler until nicely browned.
  5. Serve with vanilla ice cream.
