Basic Icing Sugar Glaze Recipe

Chef's Note
This is the "mirror" glaze that you pour over a cake. It spreads easily to a smooth coating.
You can substitute coffee, tropical fruit juice, etc. for the lemon or orange juice or water.
Add a few drops of food coloring if desired.
Ingredients
- icing sugar
- lemon or orange juice or water
Method
- Place the icing sugar in a bowl and add a little liquid.
- Stir with a wooden spoon, adding a little more liquid as required to achieve the proper consistency. Never try to inverse the process or you'll use far too much icing sugar.
The glaze should not be too runny - just thin enough to spread easily. It will harden very quickly.
