Lacy French Crêpes

Difficulty: Easy
- 250 g (9 oz.) flour
- 250 g (9 oz.) butter
- 4 eggs
- A pinch of salt
- 1 tsp. grated lemon zest (optional)
- 500 ml (2 cups) milk

Sweet crêpes - add
- 50 g (3 tbsp.) sugar
  1. Melt the butter;
  2. combine all the ingredients with an electric mixer to make a smooth batter - add a little more milk if necessary;
  3. oil the crêpe pan; holding the pan off the heat, pour in half a ladle of batter and immediately begin tilting the pan to spread the batter evenly over the surface;
  4. return to the heat and cook until the edges begin to change colour; turn over;
  5. cook for a few seconds on the other side and slide onto a plate. Keep warm until all the crêpes are cooked.
