Lamb Souvlaki Skewers

Chef's Note
Serve in pita bread with slices of tomato and onion. The best side sauce is unquestionably tzatziki.
- 750 g (1 lb. 10 oz.) boneless Lamb shoulder or leg, cut into 4 cm (1 1/2 ") cubes
- 3 tbsp. olive oil
- 3 tbsp. white wine
- 1 clove of garlic, crushed
- 1 branch of rosemary
- 1 tsp. salt
- A pinch of oregano
- Ground pepper
  1. Combine the spices, wine and oil; brush the cubes of meat on all surfaces with this mixture; 
  2. let marinate for 3 hours;
  3. assemble the skewers; grill for about 5 minutes, turn once and cook another 5 minutes.
