This is a famous recipe from France's Franche-Comté region. It's a kind of cornmeal porridge that can be served either for breakfast or as a soup. Despite looking heavy, it's actually quite light on the stomach.

- 400 g (14 oz.) cornmeal
- A good pinch of salt
- 1 knob of butter
- A little milk
Method
- bring 2 liters (8 cups) of water to a boil in a saucepan;
- combine the cornmeal with some cold water to form a smooth mixture;
- pour into the boiling water; stir with a wooden spoon to prevent the formation of lumps;
- reduce the heat and simmer for 1 hour 40 minutes;
- lighten the mixture by adding a little milk; season with salt; cook 20 minutes longer;
- stir a piece of cold butter into the porridge and serve.
