Lime-Based Cocktails Recipe

Chef's Note
Gimlet
- for each drink, place in a blender:
- 60 g (2 oz.) lime juice
- 1 egg white
- 1 tsp. sugar
- 90 g (3 oz.) gin or vodka
- or pour into a shaker and shake well;
- pour into chilled wine glasses;
- garnish with a slice of lime
Mai Tai
- for each drink, place in a blender
- the juice of 1/2 lime
- 15 g (1/2 oz.) apricot brandy
- 15 g (1/2 oz.) curaçao
- 60 g (2 oz.) Jamaica rum
- or pour into a shaker with a few ice cubes and shake;
- pour into chilled cocktail glasses
- garnish with a pineapple slice
Planter's Punch and other tropical cocktails
Sangria
- in a small saucepan, dissolve 1/2 cup (125 ml) sugar in 1 cup (250 ml) water;
- add:
- 1 lime, thinly sliced
- 1 orange, thinly sliced
- let the fruit marinate at room temperature for at least 4 hours;
- place a few ice cubes into a pitcher;
- add the syrup (water and sugar) and marinated fruits;
- cover with a bottle of red wine;
- mix and serve
