Lime-Based Cocktails

Chef's Note


  1. for each drink, place in a blender:
    • 60 g (2 oz.) lime juice
    • 1 egg white
    • 1 tsp. sugar
    • 90 g (3 oz.) gin or vodka
  2. or pour into a shaker and shake well; 
  3. pour into chilled wine glasses;
  4. garnish with a slice of lime

Mai Tai

  1. for each drink, place in a blender
    • the juice of 1/2 lime
    • 15 g (1/2 oz.) apricot brandy 
    • 15 g (1/2 oz.) curaçao
    • 60 g (2 oz.) Jamaica rum
  2. or pour into a shaker with a few ice cubes and shake;
  3. pour into chilled cocktail glasses 
  4. garnish with a pineapple slice

Planter's Punch and other tropical cocktails


  1. in a small saucepan, dissolve 1/2 cup (125 ml) sugar in 1 cup (250 ml) water;
  2. add:
    • 1 lime, thinly sliced
    • 1 orange, thinly sliced
  3. let the fruit marinate at room temperature for at least 4 hours;
  4. place a few ice cubes into a pitcher;
  5. add the syrup (water and sugar) and marinated fruits;
  6. cover with a bottle of red wine;
  7. mix and serve
