Whole lobster with maple-chipotle butter Recipe
Ingredients
- 4 whole lobsters 454 g / 1 lb each
Flavored butter
- 185 ml / 3/4 cup salted butter
- 65 ml / 1/4 cup maple syrup
- 1/2 tsp. ground chipotle chili
- 2 Tbsp. fresh parsley, chopped
Method
- In a large pot, bring to the boil about 2.5 cm (1") of water salted with sea salt.
- Place the lobsters in the pot and cover. Once the water returns to the boil, allow 12 minutes cooking time.
- Meanwhile, combine the remaining ingredients and heat in the microwave for 1-2 minutes.
- Stir, pour into 4 ramekins and serve with the lobster.
