Lyonnais Potatoes Recipe

A delicious accompaniment to roast beef or grilled steak
Ingredients for 4 servings
- 1.5 kg (3 lb.) Potatoes
- 60 g (1/4 cup) butter
- 2 medium onions, finely chopped
- Salt and pepper
  1. Peel the potatoes; wash them to remove any specks of peel; place in a saucepan, cover with water and boil for only 10 minutes;
  2. drain and cool slightly;
  3. cut each potato into medium slices;
  4. melt the butter in a large skillet; when it begins to foam, add the potatoes and brown for 5 minutes, turning occasionally;
  5. add the onions, salt and pepper and continue cooking at least 5 minutes longer. The potatoes are cooked once the onion is translucent and the potatoes are very tender.
