Maple bacon cheesecake

Chef's Note

Bacon with an authentic taste. You'll certainly love it for breakfast or in a BLT, but why not go a little further and try this delicious sweet and salty dessert?

Tip
Before cooking, lay the springform pan on top of a baking sheet to prevent a mess.

Ingredients
- 250 g / 1 package duBreton Black Forest Smoked Bacoń
- 325 ml / 1 1/2 cups graham cracker crumbs
- 60 ml / 1/4 cup melted butter
- 3 bricks (750 g total) cream cheese
- 250 ml / 1 cup sour cream
- 125 ml / 1/2 cup maple syrup
- 250 ml / 1 cup sugar
- 4 eggs
- 1 tsp. vanilla
Method
  1. Preheat oven to 180°C / 350°F.
  2. In a small bowl, mix together graham cracker crumbs and butter.
  3. Press graham cracker mixture into the bottom of a 22 cm / 9” springform pan. Place pan in fridge until filling is completed.
  4. In a stand mixer, combine cream cheese and sour cream and beat until fully mixed.
  5. Add maple syrup and sugar and mix until thoroughly combined.
  6. Add the eggs, one at a time, mixing until well combined after each addition.
  7. Add 85 ml / 1/3 cup of the crumbled bacon and mix until fully combined, set remaining aside.
  8. Once filling is fully mixed, pour on top of the graham cracker base.
  9. Bake for approximately 65 to 75 minutes until the top is beginning to crack and edges are pulling away from the side.
  10. Let cool to room temperature and place in the fridge uncovered for 4 hours or more.
  11. Top with remaining crumbled bacon.
