- Potatoes
- Fromage blanc or Baker's cheese (packed in its own strainer or faisselle)
- Crème fraîche
- Pie pastry (pâte brisée) for a single crust pie
- Butter
- 1 egg
Method
- Cook the peeled potatoes in boiling salted water.
- Mash the potatoes and combine them with the white ("faisselle") cheese and a good spoonful of crème fraîche to form a thick purée.
- Pour the mixture into a pie plate lined with pâte brisée (pie pastry).
- Dot with butter; brush with beaten egg; bake in the oven until browned.
