Marianne - Cheese and Potato Pie Recipe

Chef's Note

Flaky pastry filled with a mashed potato and fresh cheese filling.

- Potatoes
- Fromage blanc or Baker's cheese (packed in its own strainer or faisselle)
- Crème fraîche
- Pie pastry (pâte brisée) for a single crust pie
- Butter
- 1 egg
  1. Cook the peeled potatoes in boiling salted water.
  2. Mash the potatoes and combine them with the white ("faisselle") cheese and a good spoonful of crème fraîche to form a thick purée.
  3. Pour the mixture into a pie plate lined with pâte brisée (pie pastry).
  4. Dot with butter; brush with beaten egg; bake in the oven until browned.
