Marinated Fish Brochettes Recipe

Chef's Note
This recipe was designed to showcase a variety of frozen products available on the market (fish, herbs), but you could combine both fresh and frozen ingredients depending on the season and availability.
Ingredients
Ingredients for 6 servings
- 6 frozen fillets of firm-fleshed fish (Sea Bream or other)
- 4 lemons
- 5 tbsp. olive oil
- 2 tbsp. frozen oregano and thyme
- Salt and pepper
Method
- Defrost the fish fillets in the refrigerator and pat them dry.
- Prepare the marinade by combing the juice of two lemons, the olive oil, oregano and thyme in a bowl.
- Cut the fish into approximately 3 cm (1 1/4") cubes.
- Slice the remaining lemons into small wedges.
- Thread the cubes of fish onto 6 skewers, interspersing them with pieces of lemon.
- Place the skewers into a dish and pour the marinade over top. Let marinate in the refrigerator for 30 minutes.
- Cook on the barbecue or under the broiler for 10 minutes, turning the skewers once or twice.
- Before serving, brush with the remaining marinade.
