Mexican Salsa Recipe
Chef's Note
Chili-based sauces are an important part of Mexican culinary tradition. There is always a variety of sauces on the table - they are differentiated by the kind and strength of the chilis used in them.
You can make the salsa without chilis and cilantro if you wish. Basic Mexican salsa is really a salad of diced tomatoes and seasonings. Depending on the chef, you might find equal quantities of tomato and onion, or a proportion of 3 to 1.
However, if you want authentic Mexican salsa, you can't replace the chilis with bell peppers!
Ingredients
- 3 large tomatoes
- 5 green Serrano chilis
- 1 onion
- 1 stalk of cilantro
- 3 tbsp. olive oil
- Salt and pepper to taste
Method
- Crumple the chilis by rubbing them between your palms; grill gently in a skillet to bring out their flavor;
- chop all the ingredients;
- combine with the oil and season to taste.
