Milho Frito - Fried Cornmeal Recipe

Chef's Note
Cut into cubes and fried, this polenta-like mixture is a traditional side dish in Madeira, replacing fried potatoes.
Ingredients
- 250 g (9 oz.) cornmeal
- 2 liters (8 cups) water
- Oil for frying
- A drizzle of olive oil
- Salt
- 1 clove of garlic, minced
Method
- Cook the cornmeal with the water, garlic and olive oil until it forms a thick batter.
- Pour into a greased flat-bottomed dish so that it forms a layer about 2.5 cm (1") thick; refrigerate.
- When the preparation is relatively firm, cut into cubes or like fries.
- Deep fry in hot oil; remove once the cubes are nicely browned; season with salt and serve hot.
