Mirabelle Plum Macaroons

Ingredients
For 4 servings

- 4 large prepared macaroons
- 250 g (9 oz.) Mirabelle or Yellow Plums, cooked to a compote

Optional
- Pastry cream
- Pistachios
Method
  1. Cut the macaroons in half horizontally.
  2. Place the lightly cooked mirabelle compote on the macaroon bottoms, either alone or on a layer of pastry cream.
  3. Place the top halves of the macaroons on top and garnish with a whole mirabelle plum and a few crushed pistachios.
