New Mexican Back Ribs Recipe
Total time: more than 2 hours
Preparation time: 5 minutes Cooking time: 1-1/2 to 2 hours
Grill temperature: 160-180° C (325-350° F)

Chef's Note
*To grill with indirect heat, bank hot coals on one side or in a ring around the perimeter of the fire grate.
For gas grills, pre-heat and then turn off any burners directly below where the food will go.
Place ribs on the grill so they are not directly over any coals or gas burners and close grill hood.
Ingredients
Ingredients for 4 servings
- 1.5-2 kg (3-4 lb.) Pork back ribs
Seasoning
- 60 ml (1/4 cup) chili powder
- 1 tbsp. onion powder
- 1 tbsp. ground cumin
- 2 tbsp. salt
- 1 1/2 tsp. oregano
- 1 tsp. garlic powder
- 1 tsp. cayenne
Method
- In small bowl, stir together all seasoning ingredients.
- Rub ribs on all surfaces with seasoning rub.
- Place ribs on a medium-hot grill over indirect heat; close grill hood and grill until ribs are tender, about 1 1/2 to 2 hours. - add more charcoal briquettes to fire, if necessary, to maintain grill temperature of about 160-180°C. (325-350° F.)
