- 1 egg yolk
- 2 tbsp. strong Mustard (e.g., Dijon)
- 2 tbsp. Tomato purée
- 250-500 ml (1-2 cups) oil
- A small pinch of ground chili
Method
- in a bowl, combine the egg yolk and mustard;
- slowly add the oil, whisking constantly, to obtain a smooth creamy sauce;
- blend in the tomato purée and chili.
