- 1 egg yolk
- 2 tbsp. strong Mustard (e.g., Dijon)
- 2 tbsp. Tomato purée
- 250-500 ml (1-2 cups) oil
- A small pinch of ground chili
Method
  1. in a bowl, combine the egg yolk and mustard;
  2. slowly add the oil, whisking constantly, to obtain a smooth creamy sauce; 
  3. blend in the tomato purée and chili.
