Offal Brochettes Recipe

Ingredients
Ingredients for 4 servings
- 3 pork Rognons
- 100 g (3 1/2 oz.) Flank Steak steak
- 150 g (5 oz.) veal Liver (thick slice)
- 1 basket of cherry tomatoes
- 1 bunch of small new onions
- 50 g (2 oz.) powdered sugar
- 2 tbsp. sherry vinegar
- 1 tbsp. liquid honey
- 1 tbsp. sesame seeds
- Salt and pepper
Method
- Cut the various meats into bite-sized pieces. Season with salt and pepper.
- Remove the green stems from the new onions and halve them. Prepare the brochettes by alternating pieces of meat with the cherry tomatoes and onions.
- Place the powdered sugar into a heavy saucepan and caramelize. Off the heat, add the vinegar, mix and return to the heat. Add the honey and stir with a wooden spoon to combine everything well.
- Place the brochettes on a platter; pour the sauce over top, sprinkle with sesame seeds and turn the brochettes to coat them well.
- Cook on the grill for 10 minutes, turning half way through. Serve with a tossed salad.
