Tunisian olive oil orange cake

For 12 servings

- 3 large juicy oranges
- 200 ml / 4/5 cup olive oil
- 450 g sugar
- 500 g flour
- 4 eggs
- 20 g baking powder or1/2 pouch
- 45 ml / 3 Tbsp. sesame seeds

- 30 ml / 2 Tbsp. orange water
  1. Preheat oven to 160°C / 325°F).
  2. Oil a baking pan.
  3. Wash and grate the 3 oranges. Mix the zest in food processor with sugar.
  4. Add eggs and mix.
  5. Add orange juice (from the 3 oranges) and olive oil. Mix.
  6. In a mixing bowl, sift the flour and the baking powder.
  7. Add orange flower water (optional) and olive oil/orange juice mix (5). Stir to combine.
  8. Pour into baking pan(s). Sprinkle top with sesame seeds.
  9. Bake until top is nicely browned and cake springs back when poked gently with finger tip (about 1 hour or less if you're using one big pan or individual muffin molds.
