Onion soup - Knorr style Recipe

Chef's Note
*The little pot of Knorr stock is a gelled concentrate that really tastes like homemade stock. You can use real homemade stock or a traditional concentrate – use the amount required for the quantity of water.
Ingredients
For 6 servings
- 2 tbsp (30 mL) butter
- 2-3 big sweet onions, very thinly sliced
- 1 (1) clove garlic, finely chopped
- 1 tsp (5 mL) fresh thyme leaves
- 5½ cups (1.375 L) hot water
- 2 pots (2 pots) Knorr Homestyle Stock Beef *
- 2 tbsp (30 mL) dry sherry (optional)
- 6 (6) ½ in thick (1.5 cm) slices French bread, toasted
- 1½ cups (375 mL) shredded Swiss cheese (about 6 oz or 180 g)
Method
- Melt butter in large saucepot over medium heat and cook onions, stirring frequently, for 15 minutes or until lightly golden.
- Stir in garlic and thyme and cook, stirring constantly, for 5 minutes or until onions are very tender.
- Stir in hot water and Stock Beef, scraping up brown bits from bottom of saucepan. Bring to a boil over high heat. Reduce heat to low and simmer uncovered 8 minutes. Stir in sherry.
- Arrange 6 broiler-proof bowls on baking sheet. Evenly ladle soup into bowls, then top with bread and cheese. Broil 1 minute or until cheese is melted and bubbling.
