Onion soup - Knorr style

Chef's Note

*The little pot of Knorr stock is a gelled concentrate that really tastes like homemade stock. You can use real homemade stock or a traditional concentrate – use the amount required for the quantity of water.

Ingredients
For 6 servings

- 2 tbsp (30 mL) butter
- 2-3 big sweet onions, very thinly sliced
- 1 (1) clove garlic, finely chopped
- 1 tsp (5 mL) fresh thyme leaves
- 5½ cups (1.375 L) hot water
- 2 pots (2 pots) Knorr Homestyle Stock Beef *
- 2 tbsp (30 mL) dry sherry (optional)
- 6 (6) ½ in thick (1.5 cm) slices French bread, toasted
- 1½ cups (375 mL) shredded Swiss cheese (about 6 oz or 180 g)

Method
  1. Melt butter in large saucepot over medium heat and cook onions, stirring frequently, for 15 minutes or until lightly golden.
  2. Stir in garlic and thyme and cook, stirring constantly, for 5 minutes or until onions are very tender.
  3. Stir in hot water and Stock Beef, scraping up brown bits from bottom of saucepan. Bring to a boil over high heat. Reduce heat to low and simmer uncovered 8 minutes. Stir in sherry.
  4. Arrange 6 broiler-proof bowls on baking sheet. Evenly ladle soup into bowls, then top with bread and cheese. Broil 1 minute or until cheese is melted and bubbling.
