Orange Financiers Recipe

Ingredients
For about 18 financiers
- 1 unsprayed orange
- 3 eggs
- 150 g (5 oz.) butter + 40 g (3 Tbsp.) for the pans
- 120 g (4 oz.) powdered sugar
- 150 g (5 oz.) flour
Method
- Preheat the oven to 210° C (425° F).
- Butter the financier pans.
- Wash and brush the orange, grate the zest finely and squeeze the juice.
- Separate the egg yolks and whites.
- In a bowl, whisk the egg yolks with the sugar until light and pale, then add the flour.
- Melt the butter in a saucepan; add the orange zest and juice.
- Incorporate into the batter.
- Beat the egg whites to stiff peaks and gently fold them into the batter.
- Half-fill the financier molds.
- Bake for 10-12 minutes.
- Remove from the oven, unmold onto a rack and let cool completely.
