Oysters with Quartz Mignonnette Sauce Recipe

Chef's Note
Prepare little shooter glasses of Quartz vodka and place an oyster on top of each one.
Serve with a Quartz-vodka flavored mignonnette sauce. Slightly sweet and sour, it's the perfect match for fresh, briny oysters: an ideal starter to share with your valentine!

Ingredients
- 12 fresh oysters
Mignonnette Sauce
- 4 Tbsp. champagne vinegar
- 1 tsp. Quartz vodka
- 1 tsp. minced shallot
- 1 pinch of freshly-ground black pepper
- 1 pinch of raw sugar
Method
- Chill the bottle of Quartz vodka in a bucket of ice water.
- Combine the vinegar, vodka, shallot, pepper and sugar in a small bowl.
- Open the oysters.
- Pour 30 ml (1 oz.) of chilled vodka into each shooter glass.
- Place an oyster on the half shell on each glass.
- Season the oysters with a drizzle of mignonnette sauce, about 1/2 to 1 tsp. each, to taste or depending on the size of the oyster.
