Oysters with Quartz Mignonnette Sauce

Chef's Note

Prepare little shooter glasses of Quartz vodka and place an oyster on top of each one.

Serve with a Quartz-vodka flavored mignonnette sauce. Slightly sweet and sour, it's the perfect match for fresh, briny oysters: an ideal starter to share with your valentine!

Ingredients
- 12 fresh oysters

Mignonnette Sauce
- 4 Tbsp. champagne vinegar
- 1 tsp. Quartz vodka
- 1 tsp. minced shallot
- 1 pinch of freshly-ground black pepper
- 1 pinch of raw sugar
Method
  1. Chill the bottle of Quartz vodka in a bucket of ice water.
  2. Combine the vinegar, vodka, shallot, pepper and sugar in a small bowl.
  3. Open the oysters.
  4. Pour 30 ml (1 oz.) of chilled vodka into each shooter glass.
  5. Place an oyster on the half shell on each glass.
  6. Season the oysters with a drizzle of mignonnette sauce, about 1/2 to 1 tsp. each, to taste or depending on the size of the oyster.
