Oysters Supreme with Crab and Avocado Recipe

Ingredients
Ingredients for 4-6 servings
- 2-3 dozen Oysters
- 1 Avocado
- 100 g (3 1/2 oz.) butter
- 250 ml (1 cup) Crab
- 125 ml (1/2 cup) cream
- 125 ml (1/2 cup) white flour
- 125 ml (1/2 cup) mayonnaise
- 125 ml (1/2 cup) tomato purée
- 125 ml (1/2 cup) milk
- 1 tsp. curry powder
- Cheese
- Paprika
Method
- Arrange the opened oyster in their shells on a shallow oven tray.
- Melt the butter add the flour to make a roux. Add the mayonnaise, tomato puree, milk and curry powder, stir to make a smooth mixture and cook slowly for 5 minutes, allow to cool.
- Mash the avocado and crab meat together and add to the cooled mixture.
- Place carefully on top of the oysters, then add the cream.
- Grate tasty cheese over the top, dust with paprika and bake for 10 minutes.
- Serve immediately.
