Oysters Supreme with Crab and Avocado

Ingredients
Ingredients for 4-6 servings
- 2-3 dozen Oysters
- 100 g (3 1/2 oz.) butter
- 250 ml (1 cup) Crab
- 125 ml (1/2 cup) cream
- 125 ml (1/2 cup) white flour
- 125 ml (1/2 cup) mayonnaise
- 125 ml (1/2 cup) tomato purée
- 125 ml (1/2 cup) milk
- 1 tsp. curry powder
- Cheese
- Paprika
Method
  1. Arrange the opened oyster in their shells on a shallow oven tray.
  2. Melt the butter add the flour to make a roux. Add the mayonnaise, tomato puree, milk and curry powder, stir to make a smooth mixture and cook slowly for 5 minutes, allow to cool.
  3. Mash the avocado and crab meat together and add to the cooled mixture.
  4. Place carefully on top of the oysters, then add the cream.
  5. Grate tasty cheese over the top, dust with paprika and bake for 10 minutes.
  6. Serve immediately.
