Chef's Note
In Peru, yellow-fleshed potatoes (papas) are used. Cooked in a spicy sauce, they are presented on a plate with the traditional shelled hardboiled egg rolled in a lettuce leaf. Sometimes a few olives are added.

- 350 g (12 oz.) yellow-fleshed Potatoes
- 200 g (7 oz.) Fromage blanc or Baker's cheese
- 2 sour oranges
- 1 tsp. ground chili
- 4 hard-boiled eggs
- A few lettuce leaves
Method
- Make a sauce by combining the cheese, juice of the oranges and chili powder;
- peel the potatoes, place them into the sauce and simmer until cooked;
- serve as described in the introduction.
