- 450 g (1 lb.) white peas (Dry Beans), not split
- 3 liters (12 cups) water
- 1/4 tsp. baking soda
- 2 onions
- 2 tbsp. vegetable shortening
- A bunch of parsley
- Savory to taste
- Salt and pepper
Method
- place the peas in a pot and soak overnight in 3 liters (12 cups) water;
- the next day, place the pot on the heat and bring to a boil; add the soda and wait until the skins come off the peas and rise to the surface; skim off the skins;
- rinse the peas well in cold water;
- return the peas to the pot; add 3 liters (12 cups) fresh water and the bacon; bring to a boil; skim the surface; reduce the heat; half cover and simmer until the peas are tender, about 3 hours;
- meanwhile, brown the chopped onion in a little shortening or butter in a skillet; add to the pot with the salt, pepper, parsley and savory;
- just before serving, correct the seasoning.
